Use of vineyard : organic farming (Ecocert 2021) with tilling of the plots using a plow or tracked vehicle (chenillette) and manual harvesting.
Vinifications : indigenous yeasts, natural fermentation without additives, aging in vats / 300 and 600 liter oak barrels / terracotta amphora / concrete eggs depending on the vintage, light sulfiting at bottling.
